Dont mistake me for having narcissism – this muesli was named by my husband 🙂
This is a gluten free breakfast option. As many of you know, I am a big fan of reducing the amount of gluten we eat on a daily basis. If you dont need to cut it out, then you can keep eating it in moderation, however we often over indulge. Cereal for breakfast, a sandwich for lunch, and pasta for dinner is a huge intake of wheat and gluten, yet many of my patients eat this way regularly. Here is a delicious (awesome) breakfast option that is super healthy as well and will cut out gluten for the first meal of the day.
Ingredients:
(please note, I have put large quantities here – which will make about 2 weeks worth of muesli. You will be able to purchase all ingredients at the health food store. I get mine from the local market, which is even cheaper)
2 cups of puffed quinoa
1 cup flaked coconut
1 cup sunflower seeds
1 cup almonds
2 cups of pipitas
1/2 cup linseeds
1 cup dried apples (chopped into cm pieces)
2 cups pitted dated (chopped into cm pieces)
1 tablespoon cinnamon
Assemble all ingredients into an air tight container and enjoy with your choice of milk.
Some of the many health benefits of the muesli:
Quinoa is a high protein grain, so gives sustained energy release.
Sunflower seeds are high in Vitamin E
Almonds are high in magnesium
Pipitas are high in zinc
Linseeds are high in phytooestrogens
Dates are high in fibre
Cinnamon is a spice that is good for digestion and sugar cravings
